The storeroom should be well lit, well-ventilated, cool, dry, and clean at all times.
Thermometers should be placed in all storage areas and checked frequently.
Recommended temperature is 50 - 85°F. If dry food storage goes over 85°F take
corrective action. See policy page 6.18.

2. Storage areas should be free from exposed pipes, drains, and mechanical
equipment.

3. Food storage areas should be used only for food. Items such as bleach, soap,
and other cleaning supplies should be stored in entirely separate and specific
areas.

4. All shelves and storage racks or platforms should be in accordance with state
and federal regulations to facilitate air circulation and promote easy and regular
cleaning. Shelves and cupboards will not be lined with shelf paper or other liners.
All food and food containers are to be stored 6'' off the floor and on clean
surfaces in a manner that protects it from contamination. Store all food and
supplies at least 18'' from the ceiling for fire sprinkler clearance.

5. Routine cleaning and pest control procedures should be developed and followed.

6. Dry bulk foods (flour, sugar, dry beans, food thickener, spices, etc.) should be
stored in seamless metal or plastic containers with tight covers, or in bins which
are easily sanitized. If using plastic bags for dry bulk food storage, food grade
bags must be used. Scoops should not be left in the containers. Do not add more
product to a bin container until it is empty and sanitized. Bins/containers are to be
labeled, covered and dated. If lining bins use food grade bags.

7. Remove food from the packing boxes upon delivery. This is to minimize pests.
Loose cookies and crackers should be placed in containers or bins (as explained
in #6 above). Empty canned goods containers such as #10 cans should not be
re-used.

Docusign Envelope ID: E390BADC-1E44-881F-8033-84699C40C47B
